Ingredients

  • Fresh brussels sprouts, small to medium-sized
  • Granulated sugar
  • Natural food coloring (optional)
  • Vanilla extract
  • Lemon juice
  • Powdered sugar

Instructions

  1. Wash and trim the brussels sprouts, removing any discolored outer leaves.
  2. Steam or boil the brussels sprouts until tender, about 7-10 minutes. Drain well and let cool completely.
  3. Add the cooled brussels sprouts to a food processor or blender and puree until smooth. Add a splash of lemon juice and blend again to remove bitterness.
  4. Use a fine mesh sieve to strain the puree, separating the liquid from any solids.
  5. Combine granulated sugar, a few drops of food coloring, and vanilla extract in a mixing bowl. Gradually add the brussels sprouts liquid, stirring until the sugar is fully dissolved.
  6. Preheat the cotton candy machine according to the manufacturer’s instructions.
  7. Pour the mixture into the machine and use a wooden skewer to collect the spun sugar as it forms. Spin carefully to shape the cotton candy into fluffy bundles.
  8. Lightly dust the cotton candy with powdered sugar for an extra sweet layer.
