  • 2 cups cooked turkey, shredded or diced
  • 1 cup wild rice, cooked according to package instructions
  • 1 cup diced celery
  • 1 cup diced carrots
  • 1 cup chopped mushrooms
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese, divided
  • Salt, pepper, garlic powder, and thyme to taste
  • 1/2 cup panko breadcrumbs (optional)

Instructions

  1. Cook the wild rice according to the package instructions. Set aside.
  2. In a large sauté pan, melt the butter over medium heat. Add the celery, carrots, and mushrooms, and cook until softened, about 5-7 minutes.
  3. In a medium saucepan, melt 2 tablespoons of butter over medium heat. Whisk in the flour and cook for 1-2 minutes, until golden. Gradually add the chicken broth, whisking constantly, followed by the heavy cream. Cook until thickened, about 5 minutes. Season with salt, pepper, garlic powder, and thyme.
  4. In a large mixing bowl, combine the cooked turkey, wild rice, sautéed vegetables, and half of the shredded cheese. Pour the creamy sauce over and mix until well combined.
  5. Transfer the mixture to a greased 9×13-inch baking dish. Smooth out the top and sprinkle with the remaining cheese. If desired, add a layer of panko breadcrumbs for extra crunch.
  6. Preheat your oven to 375°F (190°C). Bake the casserole uncovered for 25-30 minutes, or until bubbly and golden on top.
  7. Let the casserole cool for 5 minutes before serving. Enjoy!

Notes

For a crispier topping, broil the casserole for 2-3 minutes after baking. You can make it gluten-free by substituting the flour and breadcrumbs with gluten-free alternatives.
