In another bowl, combine 1 ¼ cups milk, 1 large egg, 3 tablespoons melted butter, and 1 teaspoon vanilla extract. Pour wet ingredients into dry and stir gently until just combined. Batter should be slightly lumpy but mixed through—overmixing can lead to tough pancakes.
  2. Divide and Color the Batter (5 minutes): Split the batter evenly into 5 small bowls. Add a few drops of different food coloring gels (red, orange, yellow, green, blue) into each bowl and stir until the colors are vibrant and smooth. Use natural colorings if preferred. Be careful not to add too much liquid coloring to avoid thinning the batter.
