A refreshing summer treat combining ripe strawberries and bubbly champagne for a luxurious and fun indulgence.

  • 2 cups fresh strawberries, washed and hulled
  • 1 cup champagne (or prosecco or sparkling wine)
  • 23 tablespoons honey or sugar
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • Optional: A handful of fresh mint leaves

Instructions

  1. Wash and hull 2 cups of fresh strawberries. If using frozen strawberries, let them thaw slightly before blending.
  2. Add strawberries, honey (or sugar), lemon juice, and vanilla extract to a blender or food processor. Blend until smooth.
  3. Optional: Strain the mixture through a fine mesh sieve for a seedless texture.
  4. Pour in 1 cup of champagne and gently mix with a spoon to preserve the bubbles.
  5. If using fresh mint, finely chop a handful and stir it into the mixture.
  6. Carefully pour the mixture into popsicle molds, leaving a little room at the top for expansion during freezing.
  7. Insert popsicle sticks and freeze for at least 4-6 hours, or until completely solid.
  8. To remove popsicles, run molds under warm water for a few seconds and gently pull on the sticks.
