These spooky Frankenstein Rice Krispie Treats are a fun and festive Halloween dessert that’s quick, easy, and perfect for kids and adults alike.

  • 6 tablespoons unsalted butter
  • 10 ounces mini marshmallows (about 6 cups)
  • 1 teaspoon vanilla extract
  • Green food coloring (a few drops)
  • 6 cups Rice Krispies cereal
  • Candy eyes
  • Chocolate candy melts (or dark chocolate chips)
  • Assorted candies (optional for decorations)

Instructions

  1. Line a 9×13-inch pan with parchment paper.
  2. Melt butter in a large saucepan over medium-low heat. Add mini marshmallows and stir continuously until melted and smooth, about 5 minutes.
  3. Remove from heat and stir in vanilla extract and green food coloring until desired shade is achieved.
  4. Quickly add Rice Krispies cereal to the marshmallow mixture and stir until evenly coated.
  5. Transfer the mixture to the prepared pan and press down firmly. Let cool completely, about 15 minutes.
  6. Cut the Rice Krispie sheet into rectangles or squares to form Frankenstein’s head.
  7. Melt chocolate candy melts in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  8. Dip the top of each rectangle into melted chocolate to create Frankenstein’s hair. Let the chocolate set for about 5 minutes.
  9. Use a toothpick or piping bag filled with melted chocolate to add stitches and scars to Frankenstein’s face.
  10. Place candy eyes on each treat using a small dab of melted chocolate as adhesive. Add other decorative candies as desired.

Notes

Work quickly with the marshmallow mixture as it sets fast. Use gel food coloring for vibrant green color. Grease your spatula or hands slightly to prevent sticking while pressing the mixture into the pan.
