These soft and sweet lemon lavender cookies are the perfect blend of tangy citrus and fragrant florals, making them a delightful treat for any occasion.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 tablespoons fresh lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon dried culinary lavender
  • Powdered sugar (optional, for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large bowl, cream the softened butter and granulated sugar until light and fluffy (about 3-4 minutes). Add the eggs, one at a time, mixing well after each addition. Stir in the lemon zest and lemon juice.
  3. In a separate bowl, whisk together the flour, baking powder, salt, and dried lavender.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Avoid overmixing.
  5. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes or until the edges are lightly golden. The centers should still look slightly soft.
  7. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a cooling rack.
  8. Optional: Dust the cookies with powdered sugar once cooled for a pretty finish.

Notes

[‘If the dough feels sticky, refrigerate it for 15-20 minutes before rolling.’, ‘Use culinary lavender for a balanced flavor.’, ‘Don’t skip the lemon zest—it’s essential for the fresh citrus flavor.’, ‘Avoid overbaking to keep the cookies soft.’]
