These savory buffalo chicken biscuit melts combine spicy buffalo chicken with flaky buttermilk biscuits for a quick, crowd-pleasing game day snack that’s easy to make and delicious.

  • ½ cup buffalo wing sauce (Frank’s RedHot recommended)
  • ¼ cup ranch dressing or blue cheese dressing
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 can (12 oz / 340 g) refrigerated buttermilk biscuits
  • 1 tablespoon melted butter (for brushing on top)
  • Optional toppings: chopped green onions or chives, extra blue cheese crumbles, celery sticks

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease an oven-safe skillet.
  2. In a medium bowl, combine shredded cooked chicken with buffalo wing sauce, ranch dressing, garlic powder, salt, and pepper. Mix well until evenly coated.
  3. Fold in shredded cheddar cheese and softened butter until combined.
  4. Open the can of refrigerated buttermilk biscuits and gently separate each biscuit. Flatten each biscuit into a disc about ¼ inch thick.
  5. Spoon about 2 tablespoons of the buffalo chicken filling onto each biscuit disc. Top with another biscuit and press edges together to seal.
  6. Brush the tops of the biscuit melts with melted butter using a pastry brush.
  7. Place the assembled melts on the prepared baking sheet, spacing about 1 inch apart. Bake for 15-18 minutes or until golden brown and cooked through.
  8. Let the biscuit melts rest for 5 minutes before serving. Garnish with chopped green onions or blue cheese crumbles if desired.

Notes

If biscuits brown too quickly, tent loosely with foil halfway through baking. Seal biscuit edges well to prevent filling leakage. Use room temperature ingredients for even mixing and baking. Leftovers store well in the fridge for up to 3 days; reheat in oven to maintain flaky texture. Can be assembled ahead and refrigerated up to 24 hours before baking (add extra bake time).
