  • Sourdough or sturdy country loaf bread, slices about 1/2 inch thick
  • 6 ounces brie cheese, rind removed
  • 2 medium yellow onions, thinly sliced
  • 3 tablespoons unsalted butter, softened
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon fresh thyme, finely chopped (optional)
  • Salt and pepper to taste
  • Pinch of garlic powder (optional)
  • Honey or balsamic glaze, for drizzling (optional)

Instructions

  1. Heat olive oil in a skillet over medium-low heat. Add thinly sliced onions, salt, pepper, and garlic powder. Stir to coat and cook slowly, stirring every 5 minutes, until onions are golden brown and sweet, about 20-25 minutes. Add thyme in the last 5 minutes.
  2. While onions caramelize, slice brie into thin pieces about 1/4 inch thick. Spread softened butter evenly on one side of each bread slice.
  3. Place one slice of bread butter-side-down on a clean surface. Layer half the caramelized onions over it, then top with slices of brie. Add remaining onions if desired. Drizzle a little honey or balsamic glaze if using. Top with the second bread slice, butter-side-up.
  4. Heat skillet over medium heat. Place sandwich in pan and cook about 3-4 minutes per side, pressing gently with a spatula. Adjust heat as needed to avoid burning. Bread should be golden and crispy, brie melted inside.
  5. Remove sandwich from pan, let rest for a minute, then slice diagonally and serve immediately.

Notes

Caramelize onions slowly over low heat for best sweetness. Remove brie rind for smooth melting. Butter bread evenly and let it soak in before cooking. Cover pan with lid if brie melts slowly. Avoid overloading onions to prevent soggy bread. Leftovers keep well refrigerated for 2 days and reheat gently in skillet.
