  • 2 tablespoons white miso paste
  • 2 cloves garlic, minced
  • 1 teaspoon soy sauce (low-sodium preferred)
  • 1 tablespoon honey
  • 1 teaspoon fresh lemon juice
  • Freshly ground black pepper, to taste
  • 1 teaspoon sesame seeds (optional, for garnish)
  • 1 tablespoon chopped green onions (optional, for garnish)

Instructions

  1. Pat the chicken breasts dry with paper towels to promote a crisp, golden crust. Season both sides with a pinch of salt and freshly ground black pepper. Let them rest at room temperature for about 10 minutes.
  2. In a small bowl, combine softened unsalted butter, white miso paste, minced garlic, soy sauce, honey, and fresh lemon juice. Mix until smooth and set aside.
  3. Place your skillet over medium heat and allow it to warm for 2-3 minutes. Add a teaspoon of neutral oil (like vegetable or canola) to help prevent sticking.
  4. Add the chicken breasts to the pan and sear for about 5-6 minutes on the first side without moving them until deep golden-brown.
  5. Turn the chicken breasts over and reduce the heat to medium-low. Add half of the miso butter sauce onto each breast, spooning some around the pan as well. Cook for another 6-8 minutes, basting occasionally with the sauce. Check the internal temperature; it should read 165°F (74°C).
  6. Transfer the chicken to a plate and tent loosely with foil. Let it rest for 5 minutes.
  7. Spoon the remaining warm miso butter sauce over the chicken. Garnish with toasted sesame seeds and chopped green onions if desired.

Notes

If the sauce thickens too much while cooking, add a splash of water or chicken broth to loosen it. Avoid high heat after adding the sauce to prevent bitterness. Resting the chicken is crucial for juiciness. For dairy-free, substitute butter with coconut oil or vegan butter and use tamari instead of soy sauce for gluten-free.
