Crisp-tender green beans wrapped in smoky bacon and drizzled with tangy balsamic glaze make for a stunning and flavorful side dish perfect for any occasion.

Ingredients

Scale
  • 1 pound fresh green beans, trimmed and washed
  • 810 slices thinly sliced bacon
  • 1/4 cup balsamic glaze (store-bought or homemade)
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easier cleanup.
  2. Trim the ends of the green beans and wash them thoroughly. Pat them dry with a kitchen towel.
  3. Place the green beans in a large mixing bowl. Drizzle with olive oil, sprinkle garlic powder, salt, and pepper, and toss to coat evenly.
  4. Take 6-8 green beans and bundle them together. Wrap a slice of bacon tightly around the middle of the bundle, overlapping slightly to secure it.
  5. Arrange the bacon-wrapped bundles seam-side down on the prepared baking sheet. If using a wire rack, place it on the sheet and arrange the bundles on top for crispier bacon.
  6. Bake for 15-20 minutes, until the bacon is crispy and the green beans are tender yet firm. Keep an eye on them to prevent overcooking.
  7. While the bundles are baking, prepare your balsamic glaze if making it from scratch. Simmer balsamic vinegar with a teaspoon of honey or sugar over low heat until thickened.
  8. Remove the bundles from the oven and drizzle generously with balsamic glaze. Serve immediately while warm.

Notes

For crispier bacon, broil the bundles for the last 2-3 minutes of cooking. If making balsamic glaze from scratch, simmer it low and slow for the perfect syrupy consistency.
