Romantic Valentine’s Strawberry Rose Crème Rollups

Delight in these easy-to-make rollups featuring a light, airy cake infused with rose water and filled with a fluffy strawberry rose crème. Perfect for Valentine’s Day or any romantic occasion.

  • ⅓ cup granulated sugar
  • ½ cup all-purpose flour
  • ¼ teaspoon salt
  • 1 teaspoon rose water
  • 1 teaspoon vanilla extract
  • ½ cup heavy whipping cream, chilled
  • 4 oz cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1 teaspoon rose water (for filling)
  • 1 cup fresh strawberries, finely chopped
  • Fresh strawberry slices (optional, for garnish)
  • Edible rose petals (optional, for garnish)
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch jelly roll pan with parchment paper, covering the sides, and lightly grease the paper.
  2. Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form (about 3-4 minutes).
  3. In another bowl, whisk the egg yolks and sugar until pale and creamy (about 2-3 minutes). Add rose water and vanilla extract, mixing gently.
  4. Sift the all-purpose flour and salt over the yolk mixture, then gently fold in with a spatula until just combined.
  5. Carefully fold in the beaten egg whites using a light folding motion to keep the batter airy.
  6. Spread the batter evenly into the prepared pan to about ½-inch thickness.
  7. Bake for 12-15 minutes until lightly golden and springy to the touch.
  8. While baking, prepare the crème filling: beat the chilled heavy cream until soft peaks form. In a separate bowl, beat cream cheese with powdered sugar and rose water until smooth.
  9. Gently fold the whipped cream into the cream cheese mixture, then fold in the chopped strawberries.
  10. Once the cake is done, immediately invert it onto a kitchen towel dusted with powdered sugar. Peel off parchment paper.
  11. Roll the cake up with the towel inside, rolling tightly but gently. Let it cool completely rolled up.
  12. Unroll the cooled cake gently and spread the strawberry rose crème filling evenly over the surface.
  13. Roll the cake back up without the towel and chill for at least 1 hour before slicing and serving.

Notes

If batter feels too thick, add a tablespoon of milk to loosen it. Chill bowl and beaters before whipping cream for fluffier peaks. Roll cake while warm in a towel to prevent cracking. Use fresh strawberries for best flavor and texture. For dairy-free, substitute cream cheese and heavy cream with coconut alternatives. For gluten-free, substitute flour with almond flour or gluten-free baking mix.
