Perfect Valentine’s Raspberry-White Chocolate Crème Cups

A quick and easy romantic dessert featuring creamy white chocolate and fresh raspberries, perfect for Valentine’s Day or any special occasion.

  • 6 oz (170 g) white chocolate chips or chopped bars
  • 8 oz (225 g) cream cheese, softened to room temperature
  • 1 cup (240 ml) heavy cream, chilled
  • 1/4 cup (50 g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (225 g) fresh raspberries, washed and dried
  • 1 teaspoon lemon zest (optional)
  • Optional garnish: white chocolate shavings or extra raspberries

Instructions

  1. Melt the white chocolate in a heatproof bowl over simmering water (double boiler), stirring gently until smooth and creamy, about 3-5 minutes. Remove from heat and let cool slightly.
  2. In a separate bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth and fluffy, about 2-3 minutes using an electric mixer.
  3. In a chilled bowl, whip the heavy cream to soft peaks, about 3-4 minutes on medium-high speed.
  4. Slowly fold the slightly cooled white chocolate into the cream cheese mixture using a rubber spatula, keeping the texture light and airy.
  5. Fold in the whipped cream in two additions, folding carefully each time to maintain airiness.
  6. Gently fold in fresh raspberries and lemon zest if using, being careful not to crush the berries.
  7. Spoon the mixture into serving cups or ramekins, filling about three-quarters full. Optionally layer some whole raspberries in the middle or on top.
  8. Refrigerate the crème cups for at least 2 hours or until firm and set.
  9. Before serving, garnish with white chocolate shavings and a few fresh raspberries. Serve chilled.

Notes

Use room temperature cream cheese to avoid lumps. Melt white chocolate slowly to prevent seizing. Do not overwhip cream to avoid grainy texture. Fold ingredients gently to keep mousse light and airy. Fresh raspberries are best; if using frozen, thaw and drain well. Chill at least 2 hours for best texture and flavor melding.
