  • ¾ cup (170g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • ½ cup (100g) brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon buttermilk
  • 1 teaspoon distilled white vinegar
  • 2 tablespoons red food coloring
  • 1 cup (180g) white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a medium bowl, whisk together all-purpose flour, unsweetened cocoa powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream softened unsalted butter, granulated sugar, and brown sugar until light and fluffy—about 2-3 minutes.
  4. Beat in the egg, pure vanilla extract, and buttermilk. Mix well, scraping down the sides as needed.
  5. Add distilled white vinegar and red food coloring. Blend until the color is vibrant and evenly distributed.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Avoid overmixing to keep the cookies soft.
  7. Fold in white chocolate chips using a spatula.
  8. Use a cookie scoop or tablespoon to drop rounds of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are set but the centers still look slightly soft. Don’t overbake!
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
