  • 810 lb bone-in ham, spiral-cut, fully cooked
  • 1/2 cup honey
  • 1 cup brown sugar
  • 2 tbsp Dijon mustard
  • 1/2 tsp ground cloves
  • 1/4 tsp ground cinnamon
  • 1/4 cup apple cider vinegar
  • 2 tbsp unsalted butter

Instructions

  1. Preheat your oven to 325°F (165°C). Place the ham on a roasting rack inside a roasting pan, cut side down.
  2. In a small saucepan, combine honey, brown sugar, Dijon mustard, ground cloves, cinnamon, apple cider vinegar, and butter. Heat over medium-low, stirring constantly, until the sugar dissolves and the glaze is smooth (about 5 minutes). Remove from heat.
  3. Using a basting brush, generously coat the ham with half of the glaze. Cover the ham loosely with foil to prevent drying.
  4. Bake the ham for about 2 hours, basting with the remaining glaze every 30 minutes. Remove the foil during the last 15 minutes of baking to allow the glaze to caramelize.
  5. Check the internal temperature of the ham using a meat thermometer. It should reach 140°F (60°C) for serving.
  6. Remove the ham from the oven and let it rest for 10–15 minutes before slicing. This helps keep the juices inside for maximum flavor.

Notes

Regular basting ensures the glaze evenly coats the ham and creates a caramelized crust. Covering the ham with foil while baking keeps it moist and juicy.
