  • 810 pounds spiral-cut ham, fully cooked, bone-in
  • ½ cup honey
  • ½ cup brown sugar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • ¼ teaspoon ground cloves
  • 2 tablespoons unsalted butter, melted
  • 1 cup water

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Place the ham flat-side down on a rack in your roasting pan. Pour about 1 cup of water into the bottom of the pan to keep the ham moist during cooking.
  3. Cover the ham tightly with aluminum foil and bake for approximately 1.5 hours.
  4. While the ham is baking, prepare the glaze. In a small saucepan, combine ½ cup honey, ½ cup brown sugar, 2 tablespoons Dijon mustard, 1 tablespoon apple cider vinegar, ¼ teaspoon ground cloves, and 2 tablespoons melted butter. Heat over medium-low, stirring until smooth and slightly thickened (about 5 minutes).
  5. Remove the ham from the oven and discard the foil. Increase the oven temperature to 375°F (190°C).
  6. Generously brush the glaze over the ham, making sure to coat all sides evenly. Return the ham to the oven and bake uncovered for another 30 minutes, basting with extra glaze every 10 minutes.
  7. Once the ham is beautifully caramelized and reaches an internal temperature of 140°F (60°C), remove it from the oven and let it rest for 15 minutes before slicing.
