  • 45 lb. bone-in, skin-on turkey breast
  • 1/2 cup (115g) unsalted butter, softened
  • 1/4 cup (60ml) honey
  • 2 minced garlic cloves
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp lemon juice (optional)
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Pat the turkey breast dry with paper towels.
  3. In a small bowl, mix softened butter, honey, minced garlic, paprika, dried thyme, salt, and black pepper until smooth.
  4. Rub half of the honey butter mixture under the skin of the turkey breast. Spread the remaining mixture evenly over the top. Drizzle with olive oil.
  5. Place the turkey breast on a roasting rack in a pan and roast uncovered for 45 minutes.
  6. Baste the turkey with pan juices. Tent with foil if browning too quickly.
  7. Continue roasting for another 30–45 minutes, or until a meat thermometer reads 165°F (74°C) in the thickest part.
  8. Remove the turkey from the oven and cover loosely with foil. Let it rest for 10–15 minutes before slicing.
