  • 2 cups (250g) crushed gingerbread cookies or graham crackers
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (113g) unsalted butter, melted
  • 24 ounces (680g) cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) sour cream, room temperature
  • 3 large eggs, room temperature
  • 1/4 cup (60ml) molasses
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • Whipped cream (optional)
  • Crushed gingerbread cookies (optional)
  • Sprinkle of cinnamon or nutmeg (optional)

Instructions

  1. Preheat your oven to 325°F (163°C). Crush the gingerbread cookies into fine crumbs using a food processor. Mix the crumbs with sugar and melted butter until the mixture resembles wet sand. Press firmly into the bottom of a 9-inch springform pan. Bake for 8 minutes, then let it cool completely.
  2. In a large bowl, beat the cream cheese and sugar on medium speed until smooth (about 2-3 minutes). Add the sour cream and molasses, mixing until fully incorporated. Then, gently beat in the eggs one at a time, followed by the spices. Scrape down the sides of the bowl to ensure everything is well blended.
  3. Pour the filling over the cooled crust, spreading it evenly with a spatula.
  4. Place the springform pan on a baking sheet and bake for 55-65 minutes. The edges should be set, but the center will still have a slight jiggle. Turn off the oven and crack the door open, allowing the cheesecake to cool inside for an hour.
  5. Transfer the cheesecake to the refrigerator and chill for at least 6 hours (overnight is best) to set completely.
  6. Add whipped cream, crushed gingerbread cookies, or a sprinkle of cinnamon for a festive finish. Serve chilled and enjoy!
