A quick and easy Cupid-themed dessert tray featuring fresh berries, chocolate-dipped strawberries, whipped cream, and cake cubes, perfect for celebrating friendship and love on Galentine’s Day.

Ingredients

  • Assorted fresh strawberries (about 2 cups, hulled)
  • Fresh raspberries and blueberries (1 cup each)
  • Mini angel food cakes or pound cake cubes (about 3 cups)
  • Fresh strawberries (1 pound, washed and dried thoroughly) for dipping
  • High-quality semi-sweet chocolate chips (8 ounces)
  • White chocolate chips (optional, 4 ounces for drizzling)
  • Heavy whipping cream (1 cup, cold)
  • Powdered sugar (2 tablespoons)
  • Pure vanilla extract (1 teaspoon)
  • Pink and red heart-shaped sprinkles (2 tablespoons)
  • Edible glitter or shimmer dust (optional)
  • Fresh mint leaves (a handful for garnish)

Instructions

  1. Wash and dry all fresh berries carefully. Hull strawberries and cut the mini angel food cake or pound cake into bite-sized cubes (about 1-inch pieces). Set aside.
  2. Chill your mixing bowl and beaters in the fridge for 10 minutes beforehand. Pour 1 cup of cold heavy whipping cream into the bowl, add 2 tablespoons powdered sugar and 1 teaspoon vanilla extract. Beat on medium-high speed until soft peaks form, being careful not to overbeat.
  3. Place semi-sweet chocolate chips in a microwave-safe bowl. Microwave in 20-second intervals, stirring each time until smooth and glossy. Repeat with white chocolate chips if using.
  4. Holding strawberries by the stem, dip each into the melted chocolate, letting excess drip off. Place on parchment-lined baking sheet. Optionally drizzle white chocolate over the dipped berries. Chill in the fridge for 15-20 minutes until firm.
  5. On your serving platter, arrange cake cubes in clusters. Add fresh berries between the clusters for pops of color. Spoon dollops of whipped cream intermittently. Place chocolate-dipped strawberries strategically. Sprinkle heart-shaped sprinkles and edible glitter across the tray, and tuck in fresh mint leaves for brightness.
  6. Keep the tray chilled until ready to serve. If transporting, cover loosely with plastic wrap to keep everything fresh.

Notes

Chill mixing bowl and beaters before whipping cream for best results. Ensure strawberries are completely dry before dipping in chocolate to prevent slipping. Chocolate-dipped strawberries should be chilled to set properly. Whipped cream can be made a day ahead and whisked before serving. Use coconut cream for dairy-free whipped cream and gluten-free cake for gluten sensitivities.
