  • 4 large eggs, room temperature

  • 1 cup whole milk, room temperature
  • 2 cups whipped topping or stabilized whipped cream
  • 1 ½ cups fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan. Set aside.
  2. In a medium mixing bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream the butter and sugar together until light and fluffy—about 3-4 minutes. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the dry ingredients, mixing just until combined. Avoid overmixing to keep the cake tender.
  5. Pour the batter into the prepared pan and smooth out the top with a spatula. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool completely in the pan before decorating. Chill the cake in the fridge for 15-20 minutes for easier topping application.
  7. Spread an even layer of whipped topping over the cooled cake using an offset spatula or butter knife.
  8. Arrange the blueberries in the upper left corner to form the ‘stars’ section of the flag. Line up the strawberries in horizontal rows to form the ‘stripes.’
  9. Serve immediately or refrigerate until ready to enjoy. This cake is best served chilled.
