  • 3 ripe bananas, mashed
  • 1 ¾ cups (220 grams) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (113 grams) unsalted butter, melted and slightly cooled
  • ¾ cup (150 grams) brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (160 grams) Nutella

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or non-stick spray and line it with parchment paper.
  2. Mash the bananas in a large bowl with a fork or potato masher until smooth but still a little chunky.
  3. Add melted butter, brown sugar, eggs, and vanilla extract to the mashed bananas. Stir gently until combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Fold the dry ingredients into the wet banana mixture gently until just combined.
  6. Warm Nutella slightly in the microwave for 15-20 seconds. Dollop half over the batter in the loaf pan and swirl gently with a knife or skewer.
  7. Pour the remaining batter on top and repeat swirling Nutella on the surface.
  8. Bake for 55-65 minutes or until a toothpick inserted near the center comes out mostly clean with a few moist crumbs.
  9. Cool the bread in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Notes

Use ripe bananas for best sweetness and moisture. Warm Nutella just enough to swirl but not too hot to avoid sinking. Tent with foil if top browns too fast. Room temperature eggs and melted (not hot) butter help blend ingredients smoothly. Avoid overmixing to keep bread tender.
