  • ½ cup (50g) cocoa powder (preferably Dutch-processed)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup (170g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • ½ cup (110g) light brown sugar
  • 2 large eggs, room temperature
  • 1 ½ teaspoons peppermint extract
  • 1 ½ cups (270g) mini semi-sweet chocolate chips
  • A few drops green food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, sift together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter with granulated sugar and light brown sugar until fluffy and pale, about 3-4 minutes using an electric mixer on medium speed.
  4. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in peppermint extract and green food coloring if using.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed just until combined. Avoid overmixing.
  6. Gently fold in the mini semi-sweet chocolate chips using a rubber spatula.
  7. Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing about 2 inches apart.
  8. Bake for 10-12 minutes, until edges are set but centers look slightly soft.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use unsalted butter softened to room temperature, not melted, to achieve the velvet-soft texture. Avoid overmixing after adding flour to keep cookies tender. Chill dough 15-30 minutes if kitchen is warm to control spreading. Use mini chocolate chips for better melting and even distribution. Store cookies in an airtight container with a slice of bread to keep them soft longer.
