  • 2 teaspoons baking powder

  • 3/4 cup (180ml) milk (whole or 2%)
  • 1/4 cup (60ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon pure peppermint extract
  • 1/2 cup (90g) mini chocolate chips
  • 1 cup (120g) powdered sugar
  • 2 tablespoons (28g) butter, melted
  • 12 teaspoons milk (for glaze)
  • Fresh mint leaves, finely chopped (optional for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease your donut pan with non-stick spray or butter.
  2. In a large bowl, whisk together all-purpose flour, granulated sugar, baking powder, salt, and unsweetened cocoa powder until evenly combined.
  3. In a separate bowl, whisk milk, vegetable oil, eggs, and peppermint extract until smooth and slightly frothy.
  4. Pour the wet ingredients into the dry ingredients and gently fold together with a spatula until just combined; small lumps are okay.
  5. Fold in mini chocolate chips gently to avoid sinking.
  6. Spoon or pipe batter evenly into the prepared donut cavities, filling about 3/4 full.
  7. Bake for 12-14 minutes, or until a toothpick inserted comes out clean or with a few moist crumbs.
  8. Allow donuts to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. Prepare the glaze by whisking powdered sugar, melted butter, and 1-2 teaspoons milk until smooth and glossy; add peppermint extract or green food coloring if desired.
  10. Dip each cooled donut into the glaze, let excess drip off, place back on the rack, and sprinkle with chopped fresh mint leaves if desired.
  11. Let the glaze set for about 15 minutes before serving.

Notes

Use room temperature eggs and milk for best results. Do not overmix the batter to keep donuts tender. Allow donuts to cool completely before glazing to prevent glaze from sliding off. If batter is too thick, add a tablespoon of milk to loosen. For gluten-free option, substitute all-purpose flour with gluten-free baking blend. For vegan version, substitute eggs with flax eggs and use plant-based milk and vegan butter.
