Instructions

  1. Rinse Brussels sprouts under cold water, trim stem ends, remove any yellow or damaged leaves, and cut in half (or quarters if large). Pat dry thoroughly.
  2. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or foil. Place a wire rack on top if you have one.
  3. In a large mixing bowl, toss Brussels sprouts with olive oil, salt, black pepper, garlic powder, and red pepper flakes if using. Set aside.
  4. Pour maple syrup into a small bowl for glazing later.
  5. Cut bacon strips in half if longer than your skewers. Thread a Brussels sprout half onto a skewer, then fold a strip of bacon and skewer it next. Alternate sprout and bacon until the skewer is full, leaving about 1 inch at each end. Repeat for 8-10 skewers.
  6. Arrange skewers on the wire rack or lined baking sheet, leaving space between each.
