Instructions

  3. Add the Champagne: Slowly pour in 1 cup (240 ml) of champagne, whisking constantly to avoid lumps. Cook for 2 minutes to let the alcohol cook off slightly.
  4. Add Stock and Cream: Gradually add 2 cups (480 ml) of chicken or vegetable stock and ½ cup (120 ml) of heavy cream. Whisk until fully combined.
  5. Season and Simmer: Add 1 teaspoon of salt, ½ teaspoon of black pepper, and 1 teaspoon of fresh thyme leaves. Simmer for 5-7 minutes, stirring occasionally, until thickened.
