  • 1/4 teaspoon black pepper
  • Edible glitter (food-grade, any color)
  • Optional: 1/4 cup (60ml) heavy cream

Instructions

  1. Prepare the ingredients: Measure out all ingredients beforehand. Mix edible glitter with a small amount of water or stock to create a paste if needed.
  2. Make the roux: Melt butter in a medium saucepan over medium heat. Whisk in flour and stir continuously for about 2 minutes until golden and nutty.
  3. Add the champagne: Slowly pour in champagne, whisking constantly to avoid lumps. Simmer for 1-2 minutes to cook off alcohol.
  4. Add the stock: Gradually add stock, whisking continuously. Bring to a gentle boil, then reduce heat to low and simmer for 5 minutes.
  5. Season: Stir in salt and black pepper. Taste and adjust seasoning as needed.
  6. Finish with cream (optional): Stir in heavy cream for a creamier texture.
  7. Add the glitter: Stir in prepared edible glitter paste or sprinkle directly into the gravy. Mix gently to create a sparkling effect.
  8. Strain (optional): Strain the gravy through a fine mesh strainer for a smooth texture.
  9. Serve: Ladle into a serving dish and serve warm.
