Instructions

  1. Peel and chop 2 pounds of russet potatoes into even chunks. Boil in salted water for about 15-20 minutes, or until fork-tender.
  2. Drain the potatoes and return them to the pot. Use a potato masher or ricer to create a smooth consistency. Avoid over-mashing as it can make the potatoes gummy.
  3. Mix in 4 tablespoons of softened unsalted butter and 1/4 cup of heavy cream. Stir until fully incorporated and silky smooth.

  5. Separate 2 eggs and whisk the yolks in a small bowl. Gradually fold them into the mashed potato mixture until evenly blended.
  6. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  7. Transfer the potato mixture into a piping bag fitted with a star tip. Pipe swirled mounds onto the prepared baking sheet, leaving space between each.
  8. Bake for 20-25 minutes, or until the edges turn golden brown and the tops are slightly crisp.
  9. Once the potatoes have cooled slightly, use a clean pastry brush to apply edible gold dust to the peaks for a luxurious finish.
