Luxurious Duchess Potatoes Recipe with Edible Gold Dust

  • 2 pounds (900 g) Yukon Gold potatoes, peeled and cut into chunks
  • 4 tablespoons (60 g) unsalted butter, softened
  • 1/4 cup (60 ml) heavy cream, warmed
  • 2 egg yolks
  • Salt and pepper, to taste
  • Pinch of nutmeg (optional)
  • Edible gold dust

Instructions

  1. Peel and chop 2 pounds (900 g) of Yukon Gold potatoes into even chunks. Place them in a large pot and cover with cold water. Add a generous pinch of salt and bring to a boil. Cook for about 15-20 minutes, or until the potatoes are fork-tender.
  2. Drain the cooked potatoes and return them to the pot. Mash them using a potato masher or ricer until completely smooth. Avoid overmixing, as this can make the potatoes gummy.
  3. Add 4 tablespoons (60 g) of unsalted butter and 1/4 cup (60 ml) of warm heavy cream to the mashed potatoes. Stir until fully combined and creamy. Mix in 2 egg yolks, one at a time, until the mixture is smooth and glossy. Season with salt, pepper, and a pinch of nutmeg, if desired.
  4. Transfer the potato mixture to a piping bag fitted with a large star tip. Pipe swirls onto a parchment-lined baking sheet, spacing them about 2 inches apart.
  5. Preheat your oven to 400°F (200°C). Bake the duchess potatoes for 20-25 minutes, or until they are golden brown and slightly crisp on the edges.
  6. Once the potatoes have cooled slightly, use a pastry brush to lightly apply edible gold dust to the tops of each potato swirl. Serve immediately.
