These Lucky Green Velvet Truffles are creamy, minty, and perfect for St. Patrick’s Day celebrations. They feature a smooth cream cheese base with a white chocolate coating and a festive green color.

Ingredients

  • 8 ounces cream cheese, softened
  • 3 cups powdered sugar, sifted
  • 1 teaspoon peppermint extract
  • 1/2 teaspoon vanilla extract
  • Green food coloring (gel or natural spirulina powder)
  • 12 ounces white chocolate chips or candy melts
  • Optional: green sanding sugar or edible glitter for decoration

Instructions

  1. Soften the cream cheese by leaving it out at room temperature for at least 30 minutes.
  2. In a mixing bowl, beat the softened cream cheese on medium speed until smooth and creamy, about 2 minutes. Slowly add powdered sugar, about 1/2 cup at a time, mixing well after each addition.
  3. Stir in peppermint extract and vanilla extract. Add green food coloring a few drops at a time until desired shade is reached.
  4. Cover the bowl with plastic wrap and refrigerate for 1 hour to firm up the mixture.
  5. Scoop tablespoon-sized portions and roll between palms to form smooth balls. Place on a parchment-lined baking sheet. If mixture becomes too sticky, chill for 10 minutes.
  6. Refrigerate the shaped truffles for 30 minutes to firm up before dipping.
  7. Melt white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each until smooth.
  8. Dip each truffle into the melted chocolate using a fork or dipping tool, letting excess drip off. Place coated truffles back onto parchment paper. Sprinkle with green sanding sugar or edible glitter if desired.
  9. Refrigerate coated truffles for at least 1 hour or until chocolate is set.
  10. Let truffles sit at room temperature for 10 minutes before serving for best texture.

Notes

Use gel food coloring to avoid adding extra moisture. Chill mixture thoroughly to make shaping easier. Melt white chocolate slowly to prevent seizing. If chocolate hardens during dipping, reheat briefly. For dairy-free, substitute cream cheese and white chocolate with vegan alternatives. Store truffles in airtight container in fridge up to one week or freeze up to 3 months.
