  • 2 medium-sized sweet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup sour cream (or Greek yogurt)
  • 1/2 cup shredded cheese (Cheddar, Monterey Jack, or smoked Gouda)
  • 1/4 cup cooked bacon, crumbled (optional)
  • 2 tablespoons green onions, sliced
  • 2 tablespoons chopped cilantro

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and peel the sweet potatoes, then slice them into 1/4-inch thick rounds.
  3. Arrange the slices on the baking sheet, drizzle with olive oil, and sprinkle with salt and pepper.
  4. Roast for 20 minutes, flipping halfway through, until golden brown and slightly crispy.
  5. While the potatoes roast, prepare the toppings: crumble the cooked bacon, shred the cheese, and chop the green onions and cilantro.
  6. Remove the sweet potato slices from the oven and top each slice with sour cream, shredded cheese, and crumbled bacon.
  7. Garnish with chopped green onions and cilantro. Serve warm.

Notes

For a vegetarian version, skip the bacon and add extra cheese and herbs. To make it vegan, use dairy-free alternatives for sour cream and cheese.
