  • 1 whole turkey (1215 lbs), thawed
  • 1 cup unsalted butter, softened
  • 6 cloves garlic, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme, finely chopped
  • 2 tablespoons fresh sage, finely chopped
  • 2 tablespoons kosher salt
  • 1 tablespoon freshly ground black pepper
  • 1 lemon, halved
  • 1 large onion, quartered
  • 2 large carrots, peeled and cut into chunks
  • 2 stalks celery, chopped
  • 2 cups chicken broth

Instructions

  1. Preheat your oven to 325°F (163°C). Remove the giblets and neck from the turkey cavity, rinse the turkey, and pat it dry with paper towels.
  2. Mix the softened butter with minced garlic and chopped herbs. Rub the mixture generously under the skin and over the turkey. Season the entire bird with salt and pepper.
  3. Fill the turkey cavity with the lemon halves, onion quarters, and some of the rosemary, thyme, and sage.
  4. Place the turkey breast-side down on the roasting rack. Arrange carrots and celery around the bird to add flavor to the drippings.
  5. Pour chicken broth into the roasting pan. Roast the turkey for 3-4 hours, basting every 30 minutes with the pan juices.
  6. Carefully flip the turkey breast-side up during the last 30 minutes of cooking. Use a meat thermometer to check the internal temperature—it should reach 165°F (74°C) in the thickest part of the breast and thighs.
  7. Let the turkey rest for 20-30 minutes before carving to ensure the juices redistribute and the meat stays moist.
