These roasted rainbow carrots with Froot Loop dust are sweet, savory, slightly nutty, and topped with a sprinkle of nostalgia—perfect for entertaining or adding a playful twist to your meal.

Ingredients

Scale
  • Rainbow carrots (orange, yellow, purple)
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of dried thyme
  • 1/2 cup Froot Loops (crushed into dust)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and peel the rainbow carrots. Slice large carrots in half lengthwise for even cooking.
  3. In a mixing bowl, toss the carrots with olive oil, honey, salt, black pepper, and dried thyme until well-coated.
  4. Spread the carrots in a single layer on the prepared baking sheet.
  5. Roast the carrots for 25-30 minutes, flipping halfway through, until caramelized and tender.
  6. While the carrots roast, crush the Froot Loops into a fine dust using a mortar and pestle or a zip-top bag and rolling pin.
  7. Transfer the roasted carrots to a serving plate and sprinkle the Froot Loop dust generously over the top. Serve immediately.
