  • 2 packets plain ramen noodles (discard seasoning packets)
  • 2 tablespoons unsalted butter (plus extra for dotting)
  • 2 tablespoons soy sauce (low-sodium preferred)
  • 1 cup celery, finely chopped
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth (or vegetable broth for vegetarian version)
  • 2 large eggs, lightly beaten
  • 1 teaspoon sugar
  • 1/2 teaspoon freshly cracked black pepper
  • Optional: chopped scallions, sesame seeds, or chili flakes for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. Boil ramen noodles according to package instructions, omitting seasoning packets. Drain and set aside.
  3. In a large skillet, melt 2 tablespoons of butter over medium heat. Add celery and onion, sauté until softened (about 5 minutes). Add minced garlic and cook for 1 additional minute.
  4. In a small bowl, whisk together soy sauce, sugar, and black pepper. Pour mixture into skillet and stir to coat vegetables.
  5. Add cooked ramen noodles to skillet and gently toss to combine, being careful not to break noodles.
  6. In another bowl, beat eggs and mix with chicken broth. Pour mixture into skillet and gently mix until evenly coated.
  7. Transfer mixture to greased baking dish. Dot the top with remaining butter.
  8. Bake uncovered for 25-30 minutes, or until top is golden brown and slightly crispy.
  9. Remove from oven and let rest for 5 minutes before serving. Garnish with scallions or sesame seeds if desired.
