  • 1 cup beer (lager, ale, or stout)
  • 2 cups sharp cheddar cheese, shredded
  • 4 ounces cream cheese, softened
  • 1 cup chicken broth
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 4 tablespoons butter, melted
  • 2 eggs, beaten
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • Optional: crispy bacon bits, green onions, smoked paprika

Instructions

  1. Cut the soft pretzels into bite-sized cubes and set aside.
  2. In a skillet, melt butter over medium heat. Add chopped onion and minced garlic, cooking until fragrant and softened (about 5 minutes).
  3. In a large bowl, whisk together the eggs, beer, chicken broth, softened cream cheese, and melted butter until smooth.
  4. Stir in the shredded cheddar cheese until evenly distributed.
  5. Add the sautéed onion mixture and pretzel cubes to the bowl. Gently toss until the pretzel pieces are evenly coated.
  6. Sprinkle with salt, pepper, and fresh parsley to taste.
  7. Pour the mixture into a greased 9×13-inch baking dish. Spread evenly.
  8. Preheat the oven to 375°F (190°C). Bake uncovered for 25-30 minutes or until the top is golden brown and slightly crispy.
  9. Let the stuffing rest for 5 minutes before scooping and serving.

Notes

Day-old pretzels work well for texture. Adjust the beer type for flavor preference. Cover with foil if the top browns too quickly during baking.
