Ingredients

Scale
  • 3 1/2 cups (450g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 2 1/4 tsp (7g) instant yeast
  • 1 tsp salt
  • 1 cup (240ml) warm whole milk
  • 1/4 cup (60g) melted unsalted butter
  • 2 eggs, room temperature
  • 1 cup (200g) brown sugar
  • 2 tbsp ground cinnamon
  • 1/4 cup (60g) softened unsalted butter
  • 1/2 cup (115g) unsalted butter
  • 1 cup (200g) brown sugar
  • 1/3 cup (80ml) heavy cream
  • 1 cup (120g) chopped pecans
  • A pinch of salt

Instructions

  1. In a large mixing bowl, whisk together flour, sugar, instant yeast, and salt. Add warm milk, melted butter, and eggs. Mix until a dough forms.
  2. Knead the dough for about 8 minutes (or 5 minutes using a stand mixer) until smooth and elastic. Cover the bowl and let the dough rise for 1 hour, or until doubled in size.
  3. Mix brown sugar and cinnamon in a bowl for the filling. Set aside. Soften butter for spreading.
  4. Roll the risen dough into a large rectangle (about 12×18 inches). Spread softened butter evenly over the surface. Sprinkle the cinnamon sugar mixture on top, pressing lightly into the dough.
  5. Roll the dough tightly from one long side to the other, forming a log. Cut into 12 equal pieces and place them in a greased 9×13-inch baking dish. Cover and let rise for 30 minutes.
  6. In a saucepan, melt butter with brown sugar and heavy cream. Stir in chopped pecans and a pinch of salt. Let cool slightly.
  7. Preheat oven to 375°F (190°C). Pour the pecan topping over the rolls and bake for 25-30 minutes, or until golden brown.
  8. Let the rolls cool for 10 minutes before serving.

Notes

[‘Use warm milk for the dough to activate the yeast properly.’, ‘Chill the pecan topping slightly before pouring it over the rolls to prevent it from soaking into the dough too quickly.’, ‘For perfectly shaped rolls, use dental floss to cut the dough instead of a knife.’, ‘Don’t skip the second rise after shaping the rolls for a soft and fluffy texture.’]
