  • 1214 lbs turkey, thawed if frozen
  • 1 cup unsalted butter, softened
  • 6 tablespoons white miso paste
  • 2 tablespoons soy sauce
  • 3 tablespoons honey
  • 4 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Fresh thyme (optional, for garnish)
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 325°F (163°C). Place oven rack in the lower third position.
  2. Remove giblets and pat the turkey dry with paper towels. Season generously with salt and pepper inside and out.
  3. In a bowl, mix softened butter, miso paste, soy sauce, honey, minced garlic, and lemon juice until smooth.
  4. Using a brush or your hands, rub the miso-butter glaze all over the turkey, including under the skin for maximum flavor.
  5. Tie the legs together with cooking twine and tuck the wing tips under the body to prevent burning.
  6. Place the turkey in the roasting pan breast-side up. Roast for approximately 3-3.5 hours, basting with olive oil every 30 minutes.
  7. Use a meat thermometer to ensure the thickest part of the breast reaches 165°F (74°C).
  8. Remove the turkey from the oven and let it rest for 20-30 minutes before carving.

Notes

If the glaze starts to brown too quickly, tent the turkey with aluminum foil to prevent burning while cooking through. For a gluten-free option, swap soy sauce for tamari.
