  • 3 tablespoons white or yellow miso paste
  • 2 tablespoons honey
  • 1 tablespoon soy sauce

  • 1 teaspoon freshly grated ginger
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 325°F (165°C) and position the rack in the lower third.
  2. Remove the giblets and neck from the turkey cavity if included. Pat the turkey dry with paper towels and season generously with salt and pepper inside and out.
  3. In a mixing bowl, combine softened butter, miso paste, honey, soy sauce, garlic, ginger, and olive oil. Mix until smooth and well combined.
  4. Using a basting brush or your hands, rub the miso-butter glaze all over the turkey, covering it evenly. Be sure to get under the skin of the breast for maximum flavor.
  5. Place the turkey on a roasting rack in the pan and roast for about 3-4 hours, or until the internal temperature reaches 165°F (74°C) in the thickest part of the breast.
  6. Every 30 minutes, spoon the pan juices over the turkey to keep it moist and flavorful.
  7. If the skin begins to brown too quickly, loosely cover the turkey with foil.
  8. Remove the turkey from the oven and let it rest for 20-30 minutes before carving. This allows the juices to redistribute, ensuring a moist turkey.
