  • 1214 lbs turkey, thawed if frozen
  • 1/2 cup pure maple syrup
  • 1/4 cup bourbon
  • 4 tbsp unsalted butter, softened
  • 2 cloves garlic, minced
  • 2 tbsp finely ground coffee
  • 1 tbsp unsweetened cocoa powder
  • 2 tbsp brown sugar
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a small bowl, mix 2 tbsp ground coffee, 1 tbsp cocoa powder, 2 tbsp brown sugar, 1 tsp paprika, 1 tsp salt, and 1/2 tsp pepper until evenly combined.
  3. Remove the neck and giblets from the turkey cavity. Pat the turkey dry with paper towels.
  4. Drizzle 2 tbsp olive oil over the turkey and apply the coffee-cocoa rub generously, covering all sides.
  5. In a small saucepan, melt 4 tbsp butter over medium heat. Stir in 1/2 cup maple syrup, 1/4 cup bourbon, and 2 minced garlic cloves. Simmer for 2-3 minutes, then remove from heat.
  6. Place the turkey breast-side up in a roasting pan. Roast for 3-4 hours, basting every 30 minutes with the maple bourbon glaze.
  7. Insert a meat thermometer into the thickest part of the thigh. The turkey is done when it reads 165°F (74°C).
  8. Remove the turkey from the oven and tent with foil. Let it rest for 20 minutes before carving.
