  • 1 1/2 cups (200g) elbow macaroni, cooked al dente
  • 1 cup (100g) shredded cheddar cheese
  • 4 oz (113g) softened cream cheese
  • 1/2 cup (120ml) milk
  • 2 tablespoons unsalted butter, melted
  • 1 1/2 cups (150g) stuffing mix or homemade stuffing
  • 2 large eggs, beaten
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin with cooking spray.
  2. Cook 1 1/2 cups (200g) of elbow macaroni according to package instructions until al dente. Drain and set aside.
  3. In a large mixing bowl, combine 1 cup (100g) shredded cheddar cheese, 4 oz (113g) softened cream cheese, and 1/2 cup (120ml) milk. Stir until smooth.
  4. Fold in the cooked macaroni, ensuring it’s evenly coated with the cheese mixture. Add a pinch of salt and pepper to taste.
  5. Prepare the stuffing mix according to package instructions or use approximately 1 1/2 cups (150g) of homemade stuffing. Let it cool slightly.
  6. In a separate bowl, whisk 2 large eggs until frothy. Mix the eggs into the mac and cheese mixture to bind everything together.
  7. Spoon the mac and cheese mixture into each muffin cup, filling about halfway. Lightly press down to create a base layer.
  8. Add a layer of stuffing on top of the mac and cheese. Press gently so the layers hold together.
  9. Sprinkle additional shredded cheddar cheese on top for extra gooeyness.
  10. Bake for 20-25 minutes, or until the tops are golden brown and slightly crispy.
  11. Let the muffins cool for 5 minutes before carefully removing them from the tin. Serve warm.
