Ingredients

  • Elbow macaroni (or penne or shells)
  • Sharp cheddar cheese
  • Mozzarella cheese
  • Whole milk or 2% milk
  • Unsalted butter
  • All-purpose flour
  • Salt
  • Black pepper
  • Panko or seasoned breadcrumbs
  • Vegetable or canola oil
  • Wooden skewers or lollipop sticks
  • Optional: Crumbled bacon
  • Optional: Diced jalapeños
  • Optional: Truffle oil

Instructions

  1. Cook the macaroni in salted water according to package instructions. Drain and set aside.
  2. In a medium saucepan, melt butter over medium heat. Whisk in the flour and cook for 1-2 minutes. Slowly add the milk, whisking constantly until the sauce thickens. Stir in the cheese, salt, and pepper until smooth and creamy.
  3. Mix the cooked macaroni with the cheese sauce in a large bowl. Spread the mixture onto a baking sheet and chill in the refrigerator for 30 minutes to firm up.
  4. Scoop the chilled mac and cheese mixture into small balls, roughly 1-2 inches in diameter. Insert a skewer into each ball and freeze for 15 minutes to set.
  5. Roll each ball in breadcrumbs, pressing gently to coat. Heat oil in a frying pan over medium heat and fry the lollipops until golden-brown, about 2-3 minutes per side.
  6. Place the fried lollipops on paper towels to drain excess oil. Serve warm and enjoy!

Notes

Chill the mac and cheese mixture thoroughly before shaping to prevent falling apart. Use fresh breadcrumbs for a crispier coating. Fry in batches to maintain oil temperature.
