Irresistible Green Bean Casserole Spring Rolls

  • 1 cup condensed cream of mushroom soup
  • 1/2 cup French fried onions
  • 1/2 cup shredded cheddar cheese
  • 12 spring roll wrappers
  • Vegetable oil, for frying
  • Salt and pepper, to taste
  • Optional dipping sauces: Ranch dressing, sriracha mayo, cranberry sauce

Instructions

  1. Heat a large skillet over medium heat. Add the fresh green beans and cook until tender-crisp, about 5 minutes.
  2. Stir in the condensed cream of mushroom soup, shredded cheddar cheese, and a handful of French fried onions. Season with salt and pepper to taste. Cook for another 2-3 minutes until the mixture is creamy and well combined. Remove from heat and let cool slightly.
  3. Lay out your spring roll wrappers and have a small bowl of water nearby for sealing the edges. Place a clean cutting board or flat surface for assembly.
  4. Take one spring roll wrapper and place about 2 tablespoons of the green bean casserole filling in the center. Fold the bottom corner up over the filling, then fold in the sides. Roll tightly and seal the edge with a bit of water. Repeat until all the filling is used.
  5. In a deep fryer or heavy-bottomed pot, heat vegetable oil to 350°F (175°C). Test the oil with a small piece of spring roll wrapper—it should sizzle immediately.
  6. Carefully place the spring rolls in the hot oil, a few at a time. Fry for 3-4 minutes or until golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.
  7. Optional baking method: Preheat your oven to 400°F (200°C). Arrange the spring rolls on a baking sheet lined with parchment paper. Brush lightly with vegetable oil and bake for 15-20 minutes, flipping halfway through, until golden and crispy.
  8. Plate the spring rolls with your favorite dipping sauce and enjoy while warm.
