  • 810 pounds fully cooked, bone-in ham
  • 1/2 cup Gochujang (Korean fermented chili paste)
  • 1/3 cup honey
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 teaspoons minced garlic
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon sesame oil
  • 1/4 cup brown sugar
  • 2 tablespoons water
  • Optional: sesame seeds for garnish
  • Optional: sliced green onions for garnish

Instructions

  1. Preheat the oven to 325°F (165°C). Place the ham on a roasting rack inside a large roasting pan.
  2. In a small saucepan, combine Gochujang, honey, soy sauce, rice vinegar, garlic, ginger, sesame oil, brown sugar, and water. Heat over medium-low, stirring occasionally, until smooth and slightly thickened (about 5 minutes).
  3. Using a sharp knife, score the surface of the ham in a diamond pattern to help the glaze penetrate the meat.
  4. Brush a generous layer of glaze over the ham, covering all sides.
  5. Cover the ham loosely with foil and bake for 1.5 to 2 hours, basting with more glaze every 20-30 minutes.
  6. Remove the foil during the last 20 minutes of baking to allow the glaze to caramelize and form a sticky, golden crust.
  7. Let the ham rest for 15 minutes before slicing. Arrange slices on a platter and garnish with sesame seeds or green onions if desired.
