Irresistible Glazed Donut Acorn Squash Rings

Transform acorn squash into glazed donut-inspired rings with a caramelized brown sugar and cinnamon glaze. Perfect for fall dinners or holiday side dishes.

  • 1 medium-sized acorn squash
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 2 tablespoons unsalted butter, melted
  • 1/4 teaspoon cinnamon
  • Pinch of nutmeg
  • Pinch of salt
  • 1 tablespoon maple syrup (optional)
  • 1/4 cup pecans, chopped and toasted

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and dry the acorn squash. Slice off both ends and cut the squash into ½-inch thick rings. Scoop out the seeds from the center of each ring.
  3. Lightly brush both sides of each squash ring with olive oil and sprinkle a pinch of salt. Arrange them in a single layer on the prepared baking sheet.
  4. Bake the rings for 20 minutes, flipping them halfway through, until they’re tender and slightly golden.
  5. In a small bowl, mix melted butter, brown sugar, cinnamon, nutmeg, and maple syrup (if using).
  6. Remove the squash from the oven and brush both sides of each ring with the prepared glaze. Return the baking sheet to the oven and bake for another 10-15 minutes, or until the glaze is bubbly and caramelized.
  7. In the last 5 minutes of baking, sprinkle chopped pecans over the rings to toast them lightly.
  8. Let the squash rings cool for 5 minutes before transferring them to a serving platter. Serve warm and enjoy!

Notes

Use fresh squash for the best texture. Toast pecans in the last few minutes of baking to prevent burning. If the glaze is too thick, add a teaspoon of water to thin it out.
