Irresistible Ghost Quesadillas Recipe with Sour Cream Drizzle

These ghost quesadillas are a festive and fun Halloween treat, combining gooey cheese, crispy tortillas, and playful ghost shapes with a tangy sour cream drizzle.

Ingredients

  • Medium or large flour tortillas
  • Shredded cheddar cheese
  • Shredded Monterey Jack cheese
  • Sliced black olives (optional)
  • Butter
  • Sour cream
  • Milk (or dairy-free milk)
  • Optional fillings: diced chicken, sautĂ©ed veggies, or black beans

Instructions

  1. Use a ghost-shaped cookie cutter or knife to cut ghost shapes out of your tortillas. You’ll need two matching ghosts per quesadilla.
  2. Place one tortilla ghost in a nonstick skillet over medium heat and sprinkle a generous layer of shredded cheese on top. Add any optional fillings if desired.
  3. Place a matching tortilla ghost on top of the cheese and press gently.
  4. Toast the quesadilla for about 2-3 minutes on each side until the cheese is melted and the tortilla is golden.
  5. Cut small pieces of olives to create eyes and a mouth for the ghost faces. Place them on the quesadilla faces while they’re still warm.
  6. In a small bowl, mix sour cream with a splash of milk until it reaches drizzling consistency. Use a spoon or piping bag to drizzle over the quesadillas.
  7. Serve warm with extra sour cream, guacamole, or salsa on the side.
