A playful twist on traditional fruitcake, these sushi rolls combine rich holiday flavors with creamy fillings for a festive and fun treat.

Ingredients

  • Dense pre-made fruitcake
  • Full-fat cream cheese, softened to room temperature
  • Jam or preserves (apricot, raspberry, or orange marmalade)
  • Chopped nuts (walnuts, pecans, or almonds)
  • Dried fruits (cranberries, raisins, or chopped dates)
  • Powdered sugar (optional, for dusting)
  • Plastic wrap

Instructions

  1. Lay a sheet of plastic wrap on your counter. Place the fruitcake on top and cover it with another sheet of plastic wrap. Use a rolling pin to gently flatten the fruitcake into an even layer, about 1/4-inch thick.
  2. In a mixing bowl, combine softened cream cheese and your choice of jam or preserves. Mix until smooth and creamy.
  3. Sprinkle chopped nuts and dried fruits evenly over the flattened fruitcake. Press them gently to ensure they stick to the surface.
  4. Remove the top layer of plastic wrap and spread the cream cheese mixture evenly over the fruitcake.
  5. Starting from one end, use the bottom layer of plastic wrap to help roll the fruitcake tightly into a log. Be careful not to crack the fruitcake as you roll.
  6. Wrap the rolled fruitcake tightly in plastic wrap and refrigerate for at least 2 hours to set the shape.
  7. Remove the plastic wrap and use a sharp knife to slice the roll into 1-inch pieces. Dust with powdered sugar before serving, if desired.

Notes

If the fruitcake is too crumbly, microwave it for 10 seconds to soften it slightly before rolling. Wipe your knife clean between slices for neat pieces.
