A creative twist on the classic holiday dessert, combining nostalgic fruitcake flavors with the playful presentation of sushi rolls.

Ingredients

  • Fruitcake (moist and dense)
  • Chopped dried apricots
  • Chopped dried cranberries
  • Chopped raisins
  • Finely chopped almonds
  • Finely chopped walnuts
  • Finely chopped pistachios
  • Softened cream cheese
  • Powdered sugar
  • Shredded coconut
  • Honey
  • Optional garnishes: edible gold flakes, sprinkles, or chocolate drizzle

Instructions

  1. In a small bowl, mix softened cream cheese and powdered sugar until smooth. Set aside.
  2. Slice the fruitcake into thin, rectangular sheets about 1/4-inch thick.
  3. Chop the dried fruits and nuts into small pieces.
  4. Lay out a sheet of plastic wrap on your countertop. Place a fruitcake sheet on top. Spread a thin layer of the cream cheese mixture evenly over the fruitcake.
  5. Sprinkle the chopped dried fruits and nuts over the cream cheese layer. Drizzle with a touch of honey.
  6. Using the plastic wrap to help, gently roll the fruitcake into a tight cylinder. Wrap the roll tightly in the plastic wrap and refrigerate for at least 1 hour to set.
  7. Remove the plastic wrap and use a sharp knife to slice the roll into bite-sized pieces. Arrange on a serving platter and garnish with shredded coconut or edible gold flakes.

Notes

Chill the rolls before slicing for clean cuts. Customize the filling with your favorite dried fruits, nuts, or spices.
