This Everything Bagel Crusted Turkey Roulade combines bold seasoning with juicy turkey for a show-stopping holiday dish that’s surprisingly simple to make.

Ingredients

Scale
  • 22.5 lbs boneless, skinless turkey breast
  • 3 tablespoons everything bagel seasoning
  • 4 ounces softened cream cheese
  • 1 cup fresh spinach, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Kitchen twine

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease your baking dish with olive oil.
  2. Butterfly the turkey breast if it isn’t already. Place it between two sheets of plastic wrap and gently pound it with a meat mallet until it’s an even thickness (about ½ inch).
  3. Sprinkle both sides of the turkey with salt and pepper.
  4. In a small bowl, mix the softened cream cheese, chopped spinach, and minced garlic until combined.
  5. Lay the turkey breast flat and spread the cream cheese mixture evenly over the surface.
  6. Gently roll the turkey breast from one end to the other, keeping the filling inside. Tie it securely with kitchen twine at 2-inch intervals.
  7. Rub olive oil all over the roulade, then sprinkle the everything bagel seasoning generously on all sides.
  8. Place the roulade in the prepared baking dish and bake for 40-50 minutes, or until the internal temperature reaches 165°F (74°C).
  9. Let the roulade rest for 10 minutes after baking, then slice into rounds and serve.

Notes

If the roulade starts browning too quickly, cover it loosely with foil during the last 10 minutes of baking. Use a meat thermometer to ensure the turkey is cooked to 165°F (74°C). Leftovers make great sandwiches!
