Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×13-inch baking pan with butter or line it with parchment paper.
  2. In a large bowl, cream together the softened unsalted butter and granulated sugar using an electric mixer or wooden spoon until light and fluffy, about 3-4 minutes.
  3. In a separate bowl, whisk together the all-purpose flour and sea salt. Gradually add the flour mixture to the butter-sugar mixture, stirring until fully combined and a crumbly dough forms. Add vanilla extract and mix just until incorporated.
  4. Press the dough evenly into the prepared pan, making sure it reaches all corners and forms a uniform layer. Bake for 18-20 minutes, or until the edges are golden and the center is set but not browned.
  5. While the base bakes, combine chopped fresh strawberries, powdered sugar, and lemon juice in a medium bowl. Toss gently to coat and set aside to macerate for about 10 minutes.
  6. Remove the toffee base from the oven and let it cool for about 10 minutes. Spread the strawberry mixture evenly over the warm base, including any juices.
  7. Melt the semi-sweet chocolate chips, unsalted butter, and optional coconut oil in a microwave-safe bowl in 20-second bursts, stirring between each, until smooth and glossy. Alternatively, melt over a double boiler.
  8. Drizzle or spread the melted chocolate over the strawberry layer evenly. Optionally, swirl the chocolate gently or sprinkle a pinch of sea salt on top.
  9. Let the bars set at room temperature for about 1 hour, or refrigerate for 30 minutes to speed up the process. Once firm, cut into squares or rectangles with a sharp knife.
