  • 6 cups day-old bread, cubed or torn into pieces
  • 1/2 cup unsalted butter, melted
  • 1 yellow onion, diced finely
  • 2 cups celery, chopped
  • 2 cups chicken or vegetable broth
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 large eggs, beaten

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking dish lightly with butter or cooking spray.
  2. Cook the bubble tea pearls according to the package instructions. Drain and set aside.
  3. In a medium saucepan, melt the butter over medium heat. Add the diced onion and chopped celery, cooking until softened and fragrant—about 5 minutes.
  4. In a large mixing bowl, combine the cubed bread, cooked bubble tea pearls, parsley, thyme, salt, and pepper. Toss gently to mix.
  5. Pour the cooked onion and celery (along with the butter) over the bread mixture and stir to combine.
  6. Whisk the eggs together in a small bowl and add them to the stuffing mixture, stirring until evenly coated.
  7. Gradually add the chicken or vegetable broth, mixing until the stuffing is moist but not soggy. Add more broth if needed.
  8. Transfer the stuffing mixture to the prepared baking dish, spreading it out evenly.
  9. Cover the dish with foil and bake for 25 minutes. Then remove the foil and bake for another 15 minutes or until the top is golden brown and slightly crispy.
  10. Remove from the oven and let it cool for a few minutes before serving. Enjoy!
