  • 6 cups day-old bread, cubed or torn into bite-sized pieces (sourdough and brioche mix preferred)
  • 4 tablespoons unsalted butter, melted
  • 1 medium onion, finely chopped
  • 2 stalks celery, diced small
  • 2 cloves garlic, minced
  • 1 ½ cups chicken or vegetable broth (low-sodium)
  • 2 large eggs, lightly beaten
  • 1 tablespoon fresh sage, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon soy sauce
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking dish lightly with butter or oil.
  2. Cook the bubble tea pearls according to the package instructions. Drain and rinse them under cold water, then set aside.
  3. In a large skillet, melt the butter over medium heat. Add the chopped onions, celery, and garlic. Sauté for about 5 minutes or until the vegetables are softened and fragrant. Remove from heat.
  4. In a large mixing bowl, combine the cubed bread, cooked bubble tea pearls, and sautéed vegetables. Toss gently to mix.
  5. In a separate bowl, whisk together the eggs, chicken or vegetable broth, soy sauce, and chopped herbs. Pour this mixture over the bread and pearl mixture.
  6. Season with salt and pepper to taste. Stir everything gently to ensure the liquid is evenly absorbed, but don’t overmix—you want the bread to retain some texture.
  7. Transfer the mixture to your prepared baking dish. Cover with foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden brown and slightly crisp.
  9. Let the stuffing cool for 5 minutes before serving.
