  • 2 cups (approximately 10 oz or 280 g) fresh Brussels sprouts, stems trimmed and outer leaves removed
  • 1 cup (200 g) granulated sugar
  • Pinch of salt
  • 1 teaspoon vanilla extract (optional)
  • Green food coloring

Instructions

  1. Wash and trim about 2 cups (approximately 10 oz or 280 g) of fresh Brussels sprouts. Remove the stems and outer leaves.
  2. In a blender or food processor, puree the Brussels sprouts until smooth. Add 2 tablespoons of water if needed to help blend.
  3. Using a fine mesh sieve, strain the Brussels sprouts puree into a bowl to remove any solids. You should be left with a smooth, liquid base.
  4. In a large mixing bowl, combine 1 cup (200 g) of granulated sugar, a pinch of salt, and 1 teaspoon of vanilla extract (optional). Stir in a few drops of green food coloring to achieve your desired shade.
  5. Gradually mix the strained Brussels sprouts puree into the sugar base until well incorporated.
  6. Spread the mixture thinly onto a baking sheet lined with parchment paper. Allow it to dry completely, either overnight or in a low oven at 150°F (65°C) for 1-2 hours.
  7. Once dry, break the mixture into small chunks suitable for your cotton candy machine.
  8. Add the chunks to your cotton candy machine and follow the manufacturer’s instructions to spin fluffy Brussels sprouts cotton candy.
